Okhotsk Okoppe Organic Milk is made using a 'low-temperature pasteurization and non-homogenized' method. It has a rich flavor with a clean, refreshing aftertaste — tasting almost as if it were just milked. The soil of Okoppe, facing the Sea of Okhotsk, is rich in calcium and minerals, and the cows graze on organic JAS-certified pasture grass grown there. This 'milk from grass,' raised with care for each individual cow's character, is the foundation of North Plain Farm's delicious milk. Its natural flavor shifts subtly with the seasons.

Nakashibetsu-cho — Hokkaido Yoroushi Yamamoto Farm — Yoroushi Pasture-Raised Milk (180ml)

Yoroushi Pasture-Raised Milk is made using a non-homogenized method that doesn't break down the fat globules. As time passes after production, the fat separates out and forms a cream layer. You can shake it well before drinking, but the owner, Mr. Yamamoto, calls this cream layer the 'Angel's Share,' and suggests more indulgent ways to enjoy it — topping your coffee with it, or spreading it on bread and scones. The cows at Yamamoto Farm are grass-fed, raised on pasture grass alone rather than grain.

Bifuka — Matsuyama Farm Sheep Milk (Yōnyū, 160ml)

Sheep milk is, as the name suggests, milk from sheep. Compared to cow's milk, it's rich and full-bodied, with abundant fat content and minerals. Sheep are smaller than cows, so the amount of milk each one produces is also small — only about 1 liter per day. At Matsuyama Farm, the sheep are currently milked carefully by hand. It offers a taste, aroma, and mouthfeel distinctly different from cow's milk.
