Ippin is a restaurant specializing in buta-don (pork bowl) operated by Sorachi, a Hokkaido tare shop that has been in business for 74 years. This dish is eaten using chopsticks.
Thick slices of Hokkaido pork loin or belly are repeatedly dipped in a special sweet and spicy sauce, and then grilled over charcoal using binchotan charcoal for an extra aromatic flavor.
The tender and thick pork can be cut to your desired size.
It is served with sweet and spicy sauce and eaten boldly with hot rice (Hokkaido rice).
